Time to cook

Just before I head out for a gym/swim with Lauren post weigh in tonight (starting the summer off right) I want to share my SW afternoon.
I made a veg filled SW quiche with quorn ham, eggs, chive low fat cottage cheese, red,orange and green peppers, tomatoes, spring onion, pickled onions and cheese.
I made up some cola flavour jelly style sweets for later and a potato salad with potatoes, herbs, spring onion and lighter than light mayo 🙂
Feels great to have the time and inclination to cook well!
